The table is moved outside, and often it doesn’t take much at all to make for a lovely evening. A few friends, a cool drink, something to share, and the freedom of knowing that nobody’s watching the clock. It’s for evenings just like these that we bake our focaccia – a bread that’s perfect for laid-back get-togethers and wins you over with its character.

Focaccia brings Mediterranean flavours to the table
A focaccia thrives on just a few ingredients of exceptional quality. Fine olive oil, aromatic rosemary and ‘Fleur des Alpes’ Alpine salt give our focaccia its distinctive flavour. The long proving time ensures that the flavours can develop fully and that the crumb retains its light yet pleasantly moist texture.
That is precisely why focaccia goes so well with so many dishes. It accompanies antipasti, pairs beautifully with grilled vegetables, and complements a selection of cheeses and charcuterie. Focaccia also cuts a fine figure with fresh salads or a summery tavolata. It blends naturally into the meal, bringing a Mediterranean touch to the table without stealing the limelight.
Traditional craftsmanship that takes a lot of time
The secret to this bread’s character lies in the way it is made. We use a wheat pre-ferment that is left to mature slowly. A twelve-hour resting period gives the dough its distinctive qualities: depth, a delicate aroma and that light, airy texture that you recognise immediately when you tear into it. Only then is the fine olive oil added, which later gives the focaccia its characteristic crumb – light and airy yet moist, with a slight elasticity that is the hallmark of a good focaccia.
Before baking, we season each loaf with ‘Fleur des Alpes’ Alpine salt and fresh rosemary. Two ingredients that do not overpower the dough, but rather enhance its flavours. In the oven, this develops into the characteristic crust: golden brown, soft on the inside, with a slight crunch that immediately gives way to the soft crumb. A loaf you break with your hands, because it would be a shame to cut into it with a knife.
