Spelt is an ancient grain that was already cultivated more than 3,000 years ago. It is an excellent source of protein and contains a high amount of dietary fiber. Spelt is also a popular alternative for people with wheat sensitivities, offering a welcome change from the many baked goods made from wheat. With so many benefits, it’s clear why we offer such a large selection of spelt baked goods.

The basis is always a pre-dough, made by carefully roasting the grain and then boiling it with water. This creates what is known as a “Kochstück” (scalded flour mixture), which must mature for 12 to 24 hours. This process ensures a naturally airy texture and a crisp crust.
