With this bread, one thing takes centre stage: time. The dough is left to rest for around 40 hours – and that’s precisely what allows a mild, balanced flavour to develop. It is baked using 100% wheat flour and our Lievito Madre, which is over 100 years old and gives the bread its distinctive character.
