From field to bread: locally grown spelt

Spelt has been a staple of the Bachmann range for many years. Whether it’s bread, plaited loaves, croissants or rolls, this versatile ancient grain impresses with its aromatic flavour and valuable properties. A prime example of this is our Demeter spelt bread, which is made using regionally grown spelt. Join us on our journey from the field to the bakery.

Demeter spelt bread from Sempach

In Switzerland, imports of frozen baked goods from abroad are rising year on year. To counteract this trend in the interests of sustainability, we are placing greater emphasis on regional sourcing. That is why our own spelt and rye are grown for us at the Sempach Station. The Stalder family, from the Demeterhof Stalder farm, sows the grain and tends to it with great passion and dedication, in accordance with the strict rules of the Demeter label.

The star among cereal varieties

They say that spelt makes you happy. And it’s healthy too! That’s why you’ll find a range of baked goods made from this ancient grain in our range – they’re sure to put a smile on your face.

Spelt is an ancient grain that was cultivated as far back as 3,000 years ago. It is an excellent source of protein and is very high in dietary fibre. Spelt is a popular alternative to the many wheat-based baked goods, and not just for those with allergies. With so many good reasons to choose it, it’s no surprise that you’ll find a wide range of spelt-based baked goods in our range. The basis is always a pre-dough, made by boiling gently roasted grains in water. This creates what is known as a ‘cooked dough’, which must be left to mature for 12 to 24 hours. This process ensures a natural, airy crumb and a crispy crust.

Whether it’s ‘Füürobigbrot’ or ‘Urdinkel Hauszopf’, wholemeal croissants or spelt ‘Chröschtli’: ask at your local specialist shop for our baked goods made from this valuable ancient grain. We also make a variety of bread rolls for sandwiches, sweet muffins and ‘Königskuchen’ using spelt.
