Pumpkin with onions and feta cheese

    1 whole-grain bread from Bachmann
    1 pumpkin (ca. 750 g), peeled, seeded, diced
    4 tbsp. olive oil
    1 tbsp. honey
    3 red onions, cut in chunks
    2 white onions, cut in chunks
    salt, pepper
    50 g walnuts, chopped
    100 g feta cheese, roughly crumbled
    1/2 bunch parsley, chopped

    Preparing pumpkin with onions and feta

    Marinate the diced pumpkin with olive oil and honey and place it in a flat baking dish. Add the onions and bake in the preheated oven at 210 °C. After 20 minutes, turn everything with a ladle, season with salt and pepper and sprinkle with walnuts. Bake for another 15 minutes. Sprinkle with feta and parsley. Serve together with whole-grain bread.
